Training Courses

KPHC provides different levels of food safety and HACCP training courses. All courses are delivered by professional certified trainers with a solid background in the industry. Our courses are highly interactive with informative workshops, exercises and case studies; suitable for trainees with different backgrounds, from front-line food handlers to high level executives. Being a CIEH and HABC – UK, authorized Training Center, we offer you the following training courses:

Level 2 Award in Food Safety

Schedule

This training course is carried out in one day (i.e. 6 hours) followed by an examination upon completion of the course. The number of attendees must not exceed 25 in each session for maximum assimilation of material enabling informative interaction.

Attendees

This course is suitable for all food handlers.

Syllabus

This course is composed of ten chapters that will thoroughly cover:

  • Introduction to food safety
  • The law
  • Food safety hazards
  • Taking temperatures
  • Refrigeration, cooling and cold holding of foods
  • Cooking, hot holding and re-heating of foods
  • Food handlers
  • Principles of safe storage
  • Cleaning
  • Food premises and equipment

Level 3 Award in Supervising Food Safety

Schedule

This training course is carried out in three days (i.e. 6 hours/day) followed by an examination upon completion of the course. The number of attendees must not exceed 10 in each session for maximum assimilation of material enabling information interaction.

Attendees

This course is beneficial to Managers, Executive Chefs, Supervisor, Team Leaders, Hygiene Officers, Dietitians, Quality Assurance, etc…

Syllabus

This course is composed of eleven chapters that will thoroughly cover:

  • Introduction
  • Legislation
  • Applying in monitoring good hygiene practice
  • Temperature control
  • Workplace and equipment design
  • Waste disposal, cleaning and disinfection
  • Pest control
  • Personal Hygiene of staff
  • Contribution to staff training
  • Implementation of food safety management procedures
  • Food safety management tools

Level 2 Award in Principles of HACCP

Schedule

This training course is carried out in one day (i.e. 6 hours) followed by examination upon completion of the course. The number of attendees must not exceed 25 in each session for maximum assimilation of material enabling informative interaction.

Attendees

This course is beneficial to all food handlers and HACCP team members.

Syllabus

This course is composed of four chapters that will thoroughly cover:

  • Introduction to food safety management
  • Developing HACCP-based systems
  • The principles of codes HACCP
  • Applying HACCP-based systems

Level 3 Award in HACCP

This training course is carried out in two days (i.e. 6 hours/day) followed by examination upon completion of the course. The number of attendees must not exceed 10 in each session for maximum assimilation of material enabling information interaction.
